I believe it is much safer to use the grinder with a suitable fixture than if hand held, provided the fixture is designed and built to resist breakage. Your safety is your own responsibility, proceed at your own risk and within your own capabilities and realm of experience.

Be sure to anchor this fixture to a suitable surface and to incorporate a backstop. Consider using a momentary contact foot switch because the grinder switch may be catchy.

This fixture fits the Harbor Freight grinder (SKU(s) 69645, 95578, 60625 DRILL MASTER), and others.

It uses a return spring from a donor clamp. It has a wider stance and a double hinge for stability. There is a stop in the upward direction to contain the spring. It is handed kind of backwards because of the switch location and direction of rotation but it is a capable tool.

Suggested hardware (not exactly as shown in picture):
For the axle use a 1/4" x 2.5" non-threaded rod with hat caps, or use a long smooth-shank bolt cut down with a hat nut to avoid having threads wearing on the plastic holes.
Same rod spec for the stop, no caps.
Use a 1/4" x 1/2" set screw or bolt to dog the stop rod in place.
Use (2) M4x20 screws and nuts for the band.
Use 1/4" hardware to mount the fixture to the bed.

The spring is from a cheap hand clamp. The clamp is 4.5" long, probably Harbor Freight. The spring eye has to accommodate the 1/4"…
